orange&poppyseed cupcakes.

orange & poppy seed cake is such an old fashioned recipe. one that always seems to please, on various occasions. it is a recipe I enjoy very much. a fresh, citrus taste with those little seed you get to pop along the way. i have created my own recipe which is a healthy version to any other. it tastes naughty but its not as naughty as you may think. try it out and see what you think. it is again, a nice easy and simple recipe. i hope you enjoy it.

you need to collect the following:
1 large whole orange, chopped - do not peel (i slice off both ends as they are quite rough)
200 mls oil
3 eggs
1 cup caster sugar
1.5 cups of wholemeal self raising flour
1.5 table spoons poppy-seeds.

now for a few simple steps:
1. pre-heat oven to 180 degrees
2. prepare your muffins pans
3. puree orange in food processor
4. add oil, sugar & eggs (mix well)
5. add poppy seeds & flour (mix well)
6. mixture will be quite runny - this is okay!
7. pour into muffin pans & bake for 25 minutes
8. allow to cool in trays.

easy banana cakes

There are so many banana recipes its crazy. I have searched high & low for the right recipe. I have experimented with many different recipes to try to find a yummy and healthy one. It has taken a while but I have finally created the perfect recipe with ingredients which work the best when combined together.

This is all you will need to collect to create your cakes:
3 medium sized bananas (i freeze peeled bananas so I simply defrosted mine before)
1 egg
1 cup natural yoghurt
2/3 cup of oil
1 teaspoon cinnamon
1 3/4 cup of wholemeal flour
1/2 cup of caster sugar
muffin tray
12 muffins pans

Now what to do?
preheat oven to 180 degrees
mix together mashed bananas, eggs, oil & yoghurt
add flour, caster sugar & cinnamon
stir with wooden spoon until just combined (do not over mix)
spoon into 12 muffin cases
bake for 25 minutes (until golden brown)
stand in pans for 5 minutes then turn on to wire rack.

here are some photos of mine ...

Colourful foods

My fridge...something personal but colourful & of course extremely good for you.

my fridge.
I enjoy food shopping, some people hate it, some people love it - i love it. A funny thing to enjoy doing but when i arrive home & fill my cupboards & fridge with healthy food it makes things feel complete, clean & healthy.

There is only Anthony & i but i love having a variety of things for breakfast, lunch & dinner.

The greener, the redder, the bluer the better when it comes to foods that are good for you.
Colorful fruits and vegetables like broccoli, tomatoes, carrots & oranges have lots of different antioxidants, lots of different phyto chemicals.
Phyto chemicals are naturally occurring plant compounds that may prevent disease.
I hope you eat at least five servings of vegetables every day & only two fruit per day.
  • Green vegetables like broccoli, spinach and romaine that protect eyesight and the immune system.
  • Red strawberries, cherries, tomatoes and apples improve heart and brain functions
  • Yellows and oranges like grapefruit, squash and carrots boost the immune system.
  • Blueberries, blackberries, purple grapes, eggplant and plums may help reduce some cancers and keep memory sharp.
Would love to know what your favourite thing is to cook with & i promise ill post some great recipes soon.

Mind over matter.

Only you can create the body you want....only you can make the decisions to make this work. It's up to you to be who you want to be...you are the strongest person in your life. Your mind is the most powerful part of your body. And your mind will decide whether or not you achieve your goals. Stop blaming other people for you not achieving the things you want to achieve.

It's about training your mind to be positive and make decisions that will make you reach your goals in life. You can do it, tell your mind that.

If your not prepared to challenge yourself & make a change, be happy with who you are today.

thanks frankie

frankie mag is my favourite, as you know & i also love stationery, have a peep at this funky site i found all thanks for frankie ... its called inky co.

it has things like this ...

Environmentally friendly, wood-free notepads!

& vintage is at the top of my list of loved things ... have a look at their collection.

O'CHECK SCISSOR STRING SPOOL

STRING IN A TIN

VINTAGE LETTERS KRAFT NOTEBOOK

SATIN LEAF - COOL

SILVER HEART SEAL

I just cant get enough of this site ... the awkward moment when you hit up your shopping cart but only to be sitting, looking at the screen wishing you had money to pay for it all.

maybe i need to start buying lotto tickets. this brings me to more discussion - how i am going on a saving wave ... starting to put my pennies to no use what to ever. Hiding them away for a rainy day.

I hope you enjoyed this tiny post.

life is not a race track

most people take things in life for granted......sometimes things happen that make us realise how important things are to us.

to me, the small things in life are my most treasured.

family is so important ... you don't realise just how great it is to hang around people with the same blood. if its been a day, a month or a year, your family are always the same & accept you for being you. thats why they are so great.

we all need to chill out and listen to the birds, feel the wind on our faces, smell the freshness in the air and appreciate the meals we eat with the ones who mean the most to us.

one day - all these things will be gone & that is when you would have wished you took more time out to just enjoy life, be yourself and appreciate what you already have.

Here are a few quotes ... I hope they inspire you too.

things in life are more beautiful when you take the time to acknowledge them.

will be in touch.
