easy banana cakes

There are so many banana recipes its crazy. I have searched high & low for the right recipe. I have experimented with many different recipes to try to find a yummy and healthy one. It has taken a while but I have finally created the perfect recipe with ingredients which work the best when combined together.

This is all you will need to collect to create your cakes:
3 medium sized bananas (i freeze peeled bananas so I simply defrosted mine before)
1 egg
1 cup natural yoghurt
2/3 cup of oil
1 teaspoon cinnamon
1 3/4 cup of wholemeal flour
1/2 cup of caster sugar
muffin tray
12 muffins pans

Now what to do?
preheat oven to 180 degrees
mix together mashed bananas, eggs, oil & yoghurt
add flour, caster sugar & cinnamon
stir with wooden spoon until just combined (do not over mix)
spoon into 12 muffin cases
bake for 25 minutes (until golden brown)
stand in pans for 5 minutes then turn on to wire rack.

macmazing

an exciting new experience ... something that will encourage & assist me in my new life skills & studies. a new career/pathway & opportunity. such an amazing creation ... the macbook. tadar!

i never knew a machine could do such things ... it will make my new career easier and brighter ... yet i still have a lot to learn about this beauty & all the amazing things it can do.

horray to the macbook & apple! anyone updrading their laptop - buy a macbook.

Prawn Stir Fry


Ingredients:

2 cups basmati rice
hand full of fresh beans
3 carrots
hand full of brocolli
2 hand fulls of mushrooms
1 onion
lots of garlic
3 cups of prawns - cooked
1 x Tsp fish sauce
1 x Tbs soy sauce
1 x Tbs honey
1 x Tbs whole mustard
olive oil 
s+p
(you can add any extra veggies you like too)

Method:

place rice in pot cover by water, bring to the boil then turn off & leave lid on
chop all veggies how you like them. peel those that need peeling
soften onion then add all veggies
add all sauces plus S+P
add all veggies - place lid on wok then turn off, letting the veggies steam cook
add prawns once veggies are cooked enough until warm.

Serve HOT.

Colourful foods

My fridge...something personal but colourful & of course extremely good for you.

I enjoy food shopping, some people hate it, some people love it - i love it. A funny thing to enjoy doing but when i arrive home & fill my cupboards & fridge with healthy food it makes things feel complete, clean & healthy.

There is only Anthony & i but i love having a variety of things for breakfast, lunch & dinner.

The greener, the redder, the bluer the better when it comes to foods that are good for you.
Colorful fruits and vegetables like broccoli, tomatoes, carrots & oranges have lots of different antioxidants, lots of different phyto chemicals. 
Phyto chemicals are naturally occurring plant compounds that may prevent disease. 
I hope you eat at least five servings of vegetables every day & only two fruit per day.
  • Green vegetables like broccoli, spinach and romaine that protect eyesight and the immune system.
  • Red strawberries, cherries, tomatoes and apples improve heart and brain functions
  • Yellows and oranges like grapefruit, squash and carrots boost the immune system.
  • Blueberries, blackberries, purple grapes, eggplant and plums may help reduce some cancers and keep memory sharp.
