Weet-bix Slice
Here is a cheeky slice which you'll enjoy. It is super easy to make + you can use a thermomix or standard cooking utensils.
Ingredients:
Body
- 12 Weet-bix (crushed)
- 1/4 cup cocoa powder
- 3/4 cup brown sugar
- 200g butter (melted)
- 1/2 cup desiccated coconut
- 1 egg
Icing
- 1 egg white
- 1/2 cup cocoa power
- Icing sugar (enough to make it the consistency you like).
Method:
- Preheat oven (180 degrees - fan forced)
- Line base of tray with baking paper
- Melt butter
- Add weet-bix, cocoa powder, sugar, coconut, egg
- Combine all together
- Press mixture to prepared tray
- Bake for approx 20min or until firm
- Allow to cool
- Add your icing
- Pop in the fridge until set.

Chilli Tomato Sauce - Thermomix
My very own home made chilli tomato
sauce. Made with love. Photos taken by me also.
Ingredients:
* 1 kg tomatoes
* 250g onions
* 60g ginger (peeled)
* 1 x large bulb of garlic
* 3 x large chillies
* 3 x small hot chillies
* 80g raw sugar
* 70g apple cider vinegar
* 1 x tablespoon salt
* 1 x generous hand full of basil

Method:
1. Mix garlic, ginger, chillies, onions.
2. Add sugar, vinegar, salt, basil + tomatoes.
3. Mix on speed 7 until all combine.
4. Cook on speed 1, 120 degrees for 60minutes.

5. Taste & puree to your liking.

orange&poppyseed cupcakes.
orange & poppy seed cake is such an old fashioned recipe. one that always seems to please, on various occasions. it is a recipe I enjoy very much. a fresh, citrus taste with those little seed you get to pop along the way. i have created my own recipe which is a healthy version to any other. it tastes naughty but its not as naughty as you may think. try it out and see what you think. it is again, a nice easy and simple recipe. i hope you enjoy it.
you need to collect the following:
1 large whole orange, chopped - do not peel (i slice off both ends as they are quite rough)
200 mls oil
3 eggs

1 cup caster sugar
1.5 cups of wholemeal self raising flour
1.5 table spoons poppy-seeds.
now for a few simple steps:
1. pre-heat oven to 180 degrees
2. prepare your muffins pans
3. puree orange in food processor
4. add oil, sugar & eggs (mix well)
5. add poppy seeds & flour (mix well)
6. mixture will be quite runny - this is okay!
7. pour into muffin pans & bake for 25 minutes
8. allow to cool in trays.
